Made with cacao from the Costa Esmeraldas farm in Ecuador. Costa Esmeraldas is a new farm owned by the Salazar family. They've collaborated with Dan O'Doherty on the farm design as well as the post harvest facility and processing. The cacao has a fairly traditional Nacional profile of floral with some fruity and spicy notes, and the balance of acidity and astringency is much better than is typical. This is an 80% formulation.
